Wrap with Sausage

Wrapping boiled egg in sausage

Once the boiled eggs have cooled, peel them and lightly wet them with water. This will aid in wrapping the eggs with sausage. Divide the sausage into 5 equal-size balls and then flatten each sausage ball into a thin layer. Carefully encase each boiled egg with the sausage, smoothing the seams to create an even wrapping around the egg.

Coat and Chill

Coating

Dip each sausage-covered egg into the beaten egg wash, allowing the excess to drain off. Next, dredge the sausage-covered egg in the seasoned flour mixture. Place the coated eggs on a plate and refrigerate them, uncovered, for 1 to 2 hours. The cooling will help the coating to set.

The Smoking Process

Smoking

When ready to cook, preheat your smoker or oven to 180°F (82°C). Smoke or cook the seasoned and sausage-covered eggs for 1 hour at the preheated temperature. After 1 hour, remove the eggs and increase the smoker/oven temperature to 375°F (190°C). Return the eggs to the grill grates or oven and cook for an additional 30 minutes.
