This simple favorite is rolling with Traeger’s signature smoky flavor. Serve this sweet treat for a festive Christmas morning breakfast, or dish it out for dessert at brunch all year round!


To make the dough, grab your favorite stand mixer and attach the dough hook. Begin combining your ingredients for a light and fluffy dough. If at any time you feel that the dough is too sticky, add additional flour as needed until the dough is smooth to the touch. Cover the bowl with plastic wrap and let sit at room temperature for 1 hour, or until doubled in size.


While the dough is rising, begin mixing the filling in a separate bowl by combining the brown sugar, sugar, and cinnamon. Return to your dough, punch it down, and roll it out onto a lightly floured surface to create a large rectangle. Spread butter evenly over the dough and sprinkle with the cinnamon and sugar. Then, starting with the long edge closest to you, roll the dough into a log, keeping it tight as you go. When you reach the edge, pinch along the edge to seal, and using a sharp knife, cut into 12-15 rolls. Place the rolls into a baking dish (don't forget to butter your baking dish!), cover with plastic wrap, and let rise for 15-20 minutes. Preheat the oven to 350°F, and bake the rolls for about 30 minutes, or until golden brown.


While the rolls are baking, prepare the icing by adding butter to a pot set over medium heat. Allow the butter to brown lightly for about 2-3 minutes. Remove from heat, and in a separate bowl, whisk together the cream cheese and maple syrup. Whisk in the butter and add the powdered sugar, vanilla, and a splash of bourbon. Spread the icing over the warm rolls. Serve and enjoy!

Filling

  • 1/2 cup Brown Sugar
  • 1/4 cup Granulated Sugar
  • 1 tbsp Cinnamon
  • 6 tbsp Salted Butter, at room temperature


Glaze

  • 4 tbsp Salted Butter, at room temperature
  • 8 oz Cream Cheese, at room temperature
  • 1/4 cup Pure Maple Syrup
  • 3 cups Powdered Sugar
  • 2 tsp Vanilla Extract
  • Splash of Bourbon

Instructions

  1. In the bowl of a stand mixer fitted with the dough hook, combine the milk, yeast, and brown sugar. Let sit for 5-10 minutes, until bubbly on top. 
  2. Add the butter, eggs, flour, and salt. Using the dough hook, mix until the flour is completely incorporated, about 4-5 minutes. If the dough is still sticky, add an additional ½ cup flour, adding more as needed until the dough is smooth to touch.
  3. Cover the bowl with plastic wrap and let sit at room temperature for 1 hour, or until doubled in size.
  4. Meanwhile, mix the filling. In a separate bowl, combine the brown sugar, sugar, and cinnamon. 
  5. Butter a 9x13 inch baking dish.
  6. Punch the dough down and roll out onto a lightly floured surface, creating a large rectangle, about 12x18 inches. 
  7. Spread butter evenly over the dough. 
  8. Sprinkle on the cinnamon and sugar, and starting with the long edge closest to you, roll the dough into a log, keeping it tight as you go. When you reach the edge, pinch along the edge to seal.
