Slice boneless, skinless chicken breasts into 1 inch cubes. 

In a large mixing bowl, combine the chicken and cornstarch. Toss until the chicken is well coated. In a separate mixing bowl, combine all the remaining ingredients except the oil. Whisk until well incorporated.

Before placing the chicken on the grill, add some seasoning, we used Kosmos SPG BBQ Rub. We recommend using something with a very simple flavor as the orange chicken has strong flavors already.

Preheat the griddle to medium-high heat. Add a thin layer of oil and the chicken to the griddle. Toss the chicken frequently using spatulas to ensure all the sides are seared. Cook until the chicken reads 165° internal temperature. Add half of the sauce to the chicken, stir continuously until the sauce is thickened and coats the chicken.

Add the remaining sauce and stir while it reduces. The sauce should be thick and sticky, fully coating the chicken.

Finally, add the white rice to the griddle and allow it to brown. Combine with the chicken and sauce, then remove from the grill and it is time to eat!
