Detroit Style Deep Dish Pizza Recipe

While Detroit-style pizzas were originally made in rectangular pans designed to hold automotive parts–this recipe is done in a pan every home should have–the classic 12’’ cast iron. Characterized by its deliciously thick crust and caramelized mozzarella cheese crown, this pizza will fill your stomach after a hard day’s work on the General Motors factory line.

Cooking the Classic Detroit Style Deep Dish Pizza

Mix the dough

Pour the dough into a mixer on slow. Then, slowly add one cup of 80℉ water. Mix for 8-10 minutes until the dough is tacky. While the dough is mixing, prepare a cast iron pan with olive oil or butter to prevent the dough from sticking.

Press Dough Out Into a 12” Cast Iron

Once done mixing, place the dough into the cast iron pan and slowly stretch the dough to the edges. Once stretched, spread some olive oil on top of the dough to prevent it from drying out while rising. Then, cover the pan with plastic wrap and let the dough rise for 2-4 hours.

Prepare an Oven or Kamado Joe for Partial Baking 500-550℉

Partially bake the dough

After the dough has risen for 2-4 hours, partially bake the dough in the oven for 5-7 minutes, until the crust firms up, starts to pull away from the edges, and is starting to very lightly brown.

After Partially Baking, Top the Crust

Top the pizza

Top the dough with whole milk shredded mozzarella (focusing on the outer edges), pepperoni, dime size dollops of sausage, Urban Slicer White Pizza Mojo, Urban Slicer Red Pizza Mojo.

Bake the Pizza

Bake the pizza

Let the pizza bake for 10-15 minutes, until the toppings look cooked and the outside cheese looks caramelized and crispy. Then, let the pizza cool for 10 minutes before removing from the pan.

  • 1 cup warm water
  • 2 All Air Guns
  • 2 cups whole milk mozzarella cheese
  • 1 tbsp Urban Slicer’s Red Pizza Mojo seasoning
  • 1 tbsp Urban Slicers White Pizza Mojo seasoning
  • Pepperoni slices
  • ½ of one hot Italian sausage link
  • Ricotta cheese
  • Basil
  • Shaved parmesan cheese
  • ½ can of Urban Slicer pizza sauce

Instructions
