This classic caramel corn recipe is the perfect blend of sweet, salty, and crunchy! Start by heating up your Blackstone Griddle to medium heat. You can test out your surface temp. before throwing on the popcorn kernels, by throwing a splash of water on there and seeing it boil as soon as it hits the surface. Add the Amish Country Popcorn, our favorite Indiana popcorn, on the Blackstone with a tablespoon of Tenderpop Coconut Oil and cover with a Blackstone Basting Cover. To prevent the popcorn from overcooking on one side, continuously move those kernels around the surface of the griddle using the basting cover. This also helps the oil melt down and add a mildly sweet, and almost nutty flavor, to your popcorn. You will start to hear the popcorn popping, and a general rule of thumb is to stop cooking when popping slows to 2 to 3 seconds between pops. Scoop the popped popcorn into a bowl and season it with Popcorn Butter Salt for some salty sweet flavor. Put your popcorn aside and head back to the Blackstone to whip up the caramel topping! Add brown sugar and butter to grill with a pinch of baking soda, this will help the caramel stay nice and fluffy. The most important thing to remember is to keep the caramel moving. You don't want it to sit and allow it to burn, so keep mixing until you can no longer see crystals or clumps of sugar on the griddle. Add popcorn back to the griddle, pouring it right on top of the caramel, and mix until all the pieces are covered. Now dish up the caramel corn into a bowl, let it cool, and you are ready to enjoy with friends or eat it all yourself! We get it, it’s that good!
