First, prepare everyone's favorite - The Kamado Joe, with Jealous Devil Charcoal, for hotter, longer, and cleaner burns with incredible flavor. Today's set includes the deflector shield on half and the grill grate open to the flame on the other. Preheat your Kamado Joe to 300°F.
Believe it or not, coffee grounds, beef dry rub, and cajun seasoning is the best seasoning combo when grilling tri-tip steak on The Kamado Joe. Begin preparing the Chili Coffee Rub by mixing together chili powder, Kosmos Q Texas Beef Dry Rub, Heath Riles Cajun Creole Garlic Butter, and Black Rifle Coffee Company Freedom Fuel Coffee.
Moving onto the meat! Carve the excess fat off the steak and drizzle olive oil on both sides of the tri-tip. Season heavily with the Chili Coffee Rub, allowing the seasoning to sit on the steak for 20 minutes while the grill comes up to temperature.

Insert the probe tip halfway into the thickest part of the meat – avoid touching any bones or the fatty portion of the protein. After your probe has been inserted, load your food onto the preheated grill. Place the steak on the grill, using the deflector shield half. It's finally grilling time!
Once the steak reaches an internal temp of 120°F, remove from the grill.
Turn up the grill to 700°F and sear each side, on the grill grate side, for 2 minutes until the internal temperature reaches 125-130° for medium rare.
Remove the meat from the grill and rest for 5-7 minutes before slicing against the grain into bite size slices.
Sprinkle salt over the steak, serve and enjoy extreme FLAVOR!
