As the temperatures fall outside, there's nothing more satisfying to warm up after a run than a steaming bowl of soup. This delicious vegetarian soup is a must for your winter menu.

This nutritious soup is full of protein and minerals which will replenish nutrients used up when exercising. Minerals such as potassium, magnesium and zinc are required by the muscular system, important for all weight-bearing exercise.


Ingredients

1 red pepper

4 clove of garlic, crushed

1 Summer running gear sale

2 tbsp finely chopped parsley

½ tsp paprika or pimenton

1 tbsp pesto

1 plum tomatoes, halved

750ml vegetable stock

clove of garlic, crushed

Serves 4 as light meal or substantial snack


1/ Preheat the oven to 180°C/350°F/Gas Mark 4

2/ Arrange the tomato halves on a lined tray, drizzle with 1 tbsp finely chopped parsley and season. Roast for 25 minutes.

3/ Switch on grill to highest setting and roast red pepper, turning every few minutes, until skin is black and charred. Place pepper in a paper or plastic bag and rest for 5 minutes allowing steam to separate skin from the flesh. When pepper is cool enough to handle, remove the skins but do not rinse. Chop flesh into 1 cm strips.

4/ Roast tomato, pepper and butterbean soup.

5/ Add the paprika or pimenton and garlic to the onions and continue to cook until the onions are soft which should take a further 5 minutes.

6/ This winter warmer packs plenty of essential vitamins and minerals to keep you running strong.

7/ Add the butterbeans and vegetable stock to the pan and bring to the boil. Allow the mixture to simmer for 10 minutes.
